Cooking Southern Style Greens

The first step (and the most important) when cooking greens, is WASHING the greens! If you don’t wash them several times, you will have gritty sand in the pot. Also remember a huge “mess” of greens looks like a lot, but it cooks down to almost nothing. For that reason, always cook more than you think you need.

Here is an easy way to make the greens of your choice in your InstantPot.

Wash them first, and I break the long stem off.  Then take 1/2 pound of bacon (cut in pieces), and sauté it in your InstantPot.  Deglaze the pot with about  3 cups of chicken stock, add salt and pepper to taste, and I add about a teaspoon (or so) of sugar. Then add your freshly cleaned greens. Seal the lid, and pressure cook for 10 minutes.  I allowed it to vent naturally.

Then, I dip the greens (with bacon) out with a slotted spoon.  There should be some liquid, but too much. The I transfer the green into a cast iron skillet.  I add a little bacon grease and again, salt and pepper to taste.

Serve them hot!  JW likes vinegar on his, some like to add red pepper, but I just like them plain.

If you have any left, freeze them for Christmas and New Years.
